Macadamia Hors d’oeuvre

Räcker till ett tjusigt serveringsfat.

Mängden går inte att ange hur många det räcker till eftersom det helt beror på hur stora endiverna är och hur förtjusta gästerna blir. Bäst är att göra en prov-omgång och avnjuta i enskildhet!

2 endiver

175 g grönmögelost

130 g macadamianötter, saltade

1 msk finhackade färska myntablad av favorit- myntasort

1 msk vitvinsvinäger

2 msk olivolja

1 msk honung

Skär botten av endiverna och ta loss bladen. Använd bara de största bladen,  som är som små båtar. Resten kan sparas till sallad.

Torrosta nötterna i en stekpanna. Skär osten i små kuber, ungefär samma storlek som nötterna. Finhacka myntabladen.

Vispa ihop olja, vinäger, mynta och honung.

Lägg 3 nötter i varje endiveblad med en kub ost mellan varje nöt.

Lägg bladen på en tallrik så att de inte lutar eller faller omkull.

Häll lite dressing längs bladet och servera.

Det här receptet kommer från Hawaii, och med alla macadamianötter som fanns överallt när jag kuskade runt på ögruppen, var det lätt att tro att de härstammar från Hawaii. Men icke! De kommer ursprungligen från Australien, men har odlats kommersiellt på Hawaii sedan sena 1800-talet. Så nu vet du det!

Räkceviche

4 portioner

1 kg räkor, oskalade, eller 300 g skalade

2  – 3 tomater

1 liten fänkål

1 näve koriander

1 – 2 lime

3 dl tomatjuice

3 msk chilisås

3 tsk flytande honung

1½ tsk worcestershiresås

3 droppar tabasco

salt

vitpeppar

Skala räkorna. Skiva tomaterna tunt och dela på mitten. Finhacka fänkålen och koriandern.

Pressa limen, och finriv skalet.

Vispa ihop en sås av limejuice och -skal, tomatjuice, chilisås, honung, worcestershiresås och tabasco.

Vänd ner räkor, tomater, fänkål och koriander i såsen.

Smaka av med salt och peppar.

Michael Patrics lammarinad

Mängder får höftas, beroende på kastrullstorlek och om du lagar mat till hela gänget eller bara lite grann.

Häll i rödvin så det täcker botten av en kastrull, ca 1 cm. Låt sakta puttra under omrörning tills vätskan reducerats till hälften. Tillsätt ca 1 dl honung. Rör tills väl blandat. 

Ös lammet med marinaden.

Om du har lammkotletter är det godast att pensla dem med marinaden och låta stå kallt en timma. Torka av dem väl innan de steks 2 -3 minuter på var sida. Spar marinaden och häll över kotletterna vid servering.

Bräsera saltat och pepprat lammköttet i smör flera minuter. Sedan flyttas det till ugnen för att stekas färdigt. Ös med marinaden flera gånger under tillagningen. En lammstek om 1½ – 2 kg steks i 175 grader. Använd en köttermometer och stek tills innertemperaturen är 72 grader för rosafärgad stek, 77 grader nästan genomstekt, och 82 grader helt genomstekt.

Smulpaj med Äpplen

1 portion för tonårspojke

Pajdeg:

2½ dl vetemjöl

5 msk smör, ca 70 g

1 nypa salt

1 msk socker

2 msk vatten

Fyllning:

7 äpplen

2 dl frysta lingon

½ msk finriven ingefära

3/4 dl flytande honung

Topping:

200 g mandelmassa

2 dl havregryn

1 dl kokosolja

Finfördela smöret i mjölet. Blanda alla ingredienser och arbeta ihop till slät deg. Kan förvaras övertäckt i kylen tills användning.

Kavla eller pressa ut degen i pajform.

Skala och skär äpplena i klyftor. Skala och finriv ingefäran.

Blanda ihop äpplen, lingon, ingefära och honung och lägg i pajformen.

Blanda ihop ingredienserna till toppingen till ett smul och strö över äpplena.

Grädda i ugnen i 220 grader i 10 min. Sänk sedan värmen till 175 grader och grädda i ytterligare 30 minuter.

Crunch with Seeds

Yields 2 cups

½ cup pumpkin seeds

½ cup sesame seeds

½ cup sunflower seeds

½ cup linseeds

2 tablespoons coconut oil

2 tablespoons honey

Roast all seeds in a dry frying pan.

Remove from heat and mix well with the oil and the honey. Re-heat the mixture while stirring for a minute or so.

Pour onto baking sheet and let cool.

Once cooled, store in airtight container.

Crunch is now a word on permanent loan in Swedish, so as no Swedish word is good enough to describe this wonderful stuff!

Crunch with Nuts

Yields 2 ½ cups

½ cup pecans, broken into pieces

½ cup pumpkin seeds

½ cup pistage nuts, cut in half

½ cup almonds, blanched, peeled and chopped, or half the amount almond slivers

½ cup sunflower seeds

1 teaspoon cinnamon

1 teaspoon cardamom

2 tablespoons honey

Mix the first seven ingredients and roast in the oven on a baking sheet at 350 degrees for 15 minutes. Stir a few times during roasting, so the roasting will be even.

Remove from oven and mix well with the honey. Roast for another 10 minutes.

Let cool. Store in closed container in a dry place.

Once cooled, store in airtight container.

Michael Patric’s Lamb Marinade

The amount of wine and honey depends on the size of your pot and if you are cooking for the entire neighborhood or just a few close friends.

Pour enough wine in a pot to cover the bottom about ½ inch deep. Allow to slowly simmer, with occasional stirring, until the liquid has reduced to about half.

Stir in about ½ cup of honey, and mix well.

Salt and pepper the meat and braise in butter for several minutes. Place meat in an oven-proof dish and ladle, or spoon, the marinade and finish baking in the oven. Spoon the marinade over the meat several times during the cooking time.

If you are having lamb chops, they will taste great if you brush them with the marinade and allow to rest in the fridge for one hour. Dry off the lamb chops well before you sauté them for 1 to 2 minutes per side, for medium-rare. Save the remaining marinade and spoon over the lamb chops when serving.

A lamb steak of about 3 to 4 pounds is baked in the oven at 350 degrees. Use an oven thermometer, to measure the meat’s inner temperature: 162 degrees for a rare steak, 171 degrees for medium, and 180 degrees for well-done.

Chicken with Mustard Cream

Serves 4

1 ⅓ pounds boneless and skinless chicken breasts

oil

salt

white pepper

1 ¼ cups whipping cream

2½ tablespoons mustard

1 tablespoon honey

1 large garlic clove, finely chopped

½ onion, finely chopped

½ teaspoon salt

3 ounces Parmesan cheese/about 1 cup shredded

Salt and pepper the chicken breasts and brown in the oil. Place the chicken breasts in an ovenproof baking dish.

Mix cream, mustard, honey, garlic, onion, and salt.

Pour the sauce over the chicken and sprinkle the shredded cheese over.

Bake at 437 degrees for 20 – 25 minutes.

This recipe is great and the chicken super tasty! It goes well together with Roasted Sweet Potatoes,  Green salad with Apple Vinaigrette.

Semifreddo with Honey

1 ¼ cup whipping cream

½ cup honey

1 egg

4 egg yolks

1 – 2 tablespoons pine nuts, roasted

Whip the cream until stiff.

In a separate bowl, whisk together the honey, egg and egg yolks over a double boiler. Make sure the water does not reach the bottom of the bowl.

Continue whisking until the mixture becomes evenly light yellow, is foaming and almost bubbling. It should get warm, but not so hot as to turn into scrambled eggs.

Gently fold in the honey mixture into the whipping cream and mix until smooth.

Cover a loaf pan, with plastic wrap and pour in the mixture. Cover tightly with plastic wrap and place in the freezer at least two hours before serving.

You may prepare the semifreddo up until this point, and store in the freezer for up to two days.

Remove the pan from the freezer and tip onto a beautiful plate. Drizzle honey back and forth over the semifreddo, and sprinkle the nuts on top. Buon appetito!
