Lime Yoghurt

As a dip or side dish for bbq’d stuff or stews

1 ¼ cup yoghurt

1 – 2 garlic cloves

1 – 2  limes, zest and juice

¼ cup olive oil

1 tablespoon honey

Salt

So this is – No shit, Sherlock! – not limes, but the lovely green and blue of forget-me-nots. Not the same taste, but a more interesting picture than one of limes.

Press the garlic into the yoghurt. Mix the juice and the zest of the lime, and the oil, into the yoghurt. Add honey and salt to taste.

Good right away, but develops more flavor if you make it a day ahead.

Very good – yummy yummy – with grilled, bbq’d or oven baked beets.This evening we enjoyed it along a chili stew instead of plain sour cream. Hey, goes well with chips or veggie sticks, too!
