3 cl Citronjuice

2 cl Honung

Blanda de tre första ingredienserna i ett stort glas och rör om ordentligt. Fyll med Ginger Beer och isbitar.

En trevlig drink med lite hetta från ingefäran, fint kompenserad av honung och citron. Uppfriskande och rolig!

Couscous extraordinär

4 dl “kokt” couscous

2 msk osaltat smör

2 msk honung

1 citron

4 persiko-halvor på burk, eller färska 

250 g haloumi

½ msk smör

50 g ruccola eller maskrosblad

Blanda ner smöret och honungen i den varma couscousen. Pressa citronen och riv skalet fint. Skär persikan i små bitar. Skiva haloumi och stek i matfett, skär sen  i små bitar. Hacka ruccolan. Blanda ner allt. Servera ljummen.

Till dressingen:

½  röd chili

1,5 dl olivolja

3 dl färska örter, t ex basilika, timjan, koriander

½ tsk salt

½ tsk mald vitpeppar

Finhacka chilin och örterna. Blanda väl med övriga ingredienser.

Chili and Lime Vinaigrette

1 – 2 limes, zest and juice

¼ cup EVOO

½ red chili, finely chopped

1 teaspoon honey

2 tablespoons cilantro, finely chopped

Salt

White pepper

Grate the zest and press the limes. Mix 2 tablespoons of lime juice with the oil, honey and spices. Add salt and pepper to taste.

A great, light Vinaigrette with my favorite flavors. Goes with everything! Well, maybe not ice cream.

Rowanberry Jam

2 pounds rowanberries (1½ – 1 ¾ quarts)

1 ¾ cups water

3 – 3 ¼ cups sugar

Clean and pick over the berries. If the berries have not been harvested after the first frost, freeze them for a day or so. The freezing eliminates some of the astringent taste.

In a pot bring water and sugar to boil. Add the berries and simmer uncovered for about 20 minutes, until the berries look clear. Shake the pot now and then.

Remove the pot from the heat and skim off the foam.

Fill warm jars with the jam and tighten the lid immediately. Invert for five minutes. Store in a dark and cool place.

A slightly tart and fresh flavor, this jam will be the talk of the town! A tad on a buttered cracker, or as a relish. Try it with whipped cream on your pancakes!

Ginger Cocktail

4 tablespoons Ginger Vodka

2 tablespoons lemon juice

2 tablespoons honey

Ginger Beer

Ice

Pour the first three ingredients into a large glass and stir vigorously. Fill glass with ice cubes and ginger beer.

A pleasant drink with a bit of heat from the ginger, nicely balanced by the honey and lemon. Refreshing and fun!

Asian Sesame Vinaigrette

2 tablespoons EVOO

2 tablespoons lemon juice

1 tablespoon lime juice

1 teaspoon honey

1 pinch of salt

1 teaspoon dried, ground, coriander seeds

1 pinch of red chili flakes

½ teaspoon sesame oil

White pepper

Whisk together. Lean back. Smell the roses, or the wonderful scent of this vinaigrette!

Tomato Salad

1 pound cherry tomatoes

4 ounces mini mozzarella balls

1 tablespoon EVOO

½ tablespoon red wine vinegar

1 bunch fresh basil

Salt and White Pepper

Cut tomatoes in quarters. Mix with the cheese, olive oil, vinegar and basil. Add salt, pepper, and honey to taste.

Tremendously popular in my kitchen! Of course, it may also be made with large tomatoes, cut into smaller pieces – preferably with seeds removed – and larger mozzarella cheese, sliced or cut into smaller pieces. To add some zip, I  exchange the regular vinegar for some balsamic vinegar and finely chop a bit of onion, and press some garlic. Was first introduced to this dish by a little señor living near Malaga, in Southern Spain.

500 g körsbärstomater

100 g minimozarella

1 msk olivolja

½ msk rödvinsvinäger

1 näve färsk basilika

Salt och vitpeppar

Skär tomaterna i fyra klyftor. Blanda med övriga ingredienser. Smaka av med salt och peppar, samt honung.

Oerhört populär i mitt kök! Kan givetvis göras med stora tomater, delade i mindre bitar – helst urkärnade – och större mozarellaost, skivad eller skuren i mindre bitar. För lite extra drag byter jag den vanliga vinägern mot balsamvinäger och finhackar en snutt gul lök och pressar i lite vitlök. Blev introducerad till denna av liten farbror nära Malaga.

Varm Pumpasallad

1 butternutpumpa, eller Yams (sötpotatis) ca 1½ kg

1 msk olivolja

½ tsk malen kanel

2 msk honung

100 g fetaost

salt

vitpeppar

1 näve färsk basilika

Skala, kärna ur och skär pumpan i små bitar.

Vänd runt bitarna i en bunke, med oljan och kanelen.

Smörj en långpanna och bred ut pumpan och rosta i ugnen i 225 grader i 18 – 20 minuter.

Smula fetaosten. Vänd runt pumpan med fetaost och honung.

Smaka av med salt och peppar och servera med färsk basilika.

Istället för att smörja plåten, eller klä den med bakplåtspapper, använder jag numera en silikonduk som håller för 200 användningar, och är lätt att diska.
