M’s Granola

Makes about 2 quarts

4 cups oatmeal

½ cups or 2 oz hazelnuts, shelled

½ cups or 1.5 oz walnuts, in pieces

½ cup almonds or ¼ cup or 1 oz almond flakes

½ cup or 2.5 oz pumpkin seeds

½ cup or 1 oz grated coconut

1 teaspoon ground cinnamon, 

1 teaspoon ground cardamom

½ teaspoon vanilla powder

½ teaspoon Himalayan salt

1 orange, zest and juice (¼ – ½ cup)

½ cup mild cooking oil

½ cup honey

1 cup dried fruit in small pieces, for instance: apples, raisins, dates, apricots

Turn oven to 175 C (350F).

Scald, peel and chop the almonds – or use already sliced almonds.

Mix the first ten ingredients.

Zest the orange and mix in with dry ingredients.

In a small bowl, mix the orange juice with the oil and the honey. Mix well into the dry ingredients.

Spread on parchment -paper covered cookie-sheet and bake for 25 minutes in convection oven, longer in regular oven, until it is roasted and of good color.

Stir several times so the granola will be evenly roasted.

Let cool.

Mix in the fruit.

Store in a dry place.

This is my absolute favorite recipe for granola! If you’re like me and feel that müsli is a bit too dry, this will splendidly add life to your yoghurt acidophilus!. Even my husband, who’s been a dedicated corn flakes-man, caved when he encountered this sumptuous mix.
