Zuccini Patties

Serves 4

2 – 3 zuccins

2 – 3 green onions

1 red chili

6 ounces parmesan or grana padano

2 eggs

1 cup flour

½ cup bread crumbs

2 teaspoons oregano

1 teaspoon salt

EVOO

Finely chop the chili and the onion. Grate the cheese.

Coarsly grate the zuccini and place in a bowl. Add salt andd allow to rest for a while. Squeeze out as much liquid as possible, and save it to use if the batter becomes too dry.

Mix all ingredients to a smooth batter. Heat oil in a pan and fry a few small dabs at a time for 3 – 4 minutes on each side.

Super good with a yoghurt sauce, coleslaw or some creamy dressing!
