Date Cake

Needs a food processor

Oil to grease the cake pan

Cocoa powder to “bread” the cake pan

½ pound pitless dates, about 1 cup

¼ pound hazel nuts without the shell

½ pound dark chocolate

½ cup EVOO

3 eggs

2 tablespoons corn starch

1 teaspoon baking powder

¼ cup chopped nuts

1 tablespoon honey

Oil a 9” spring form pan and cover the oiled inside with cocoa powder.

Mix dates, nuts, chocolate and oil in a food processor.

In a small bowl, whisk the eggs together.

In a separate bowl, mix the dry ingredients.

Blend the datemix, eggs, and flourmix, and pour into the form.

Bake at 400 degrees for about 20 minutes.

Garnish with chopped nuts and drizzle with honey.

Can be used for first date or double-date. Or with coffee at church.
