Chocolate Pudding with Vanilla Plums

Serves 4

Pudding:

8 ounces mascarpone

2 tablespoons honey

3.5 ounces dark chocolate, preferably 70%

2 tablespoons EVOO

1 egg yolk

The rest:

4 – 6 red plums

½ teaspoon vanilla powder

½ cup sugar

½ cup water

A good sized bag or container of cantuccini biscuits (almond)

Pudding:

Place half of the mascarpone, the honey and the chocolate broken into small pieces, in a pot and melt on low heat.

Remove the pot from the heat and whisk in the oil and the egg yolk.  Add the rest of the mascarpone and whisk until batter is smooth.

Divide the pudding into four nice dessert bowls and allow to stiffen in the fridge.

Resten:

Cut the plums in quarters or more if large. Place in a bowl.

Pour water and sugar into a pot and stir in the vanilla powder. Let the mixture come to a boil, so the sugar dissolves, and pour over the plums. Let cool.

To serve, add a few plum pieces in each bowl of pudding and biscuits on the side.
